Your pastas have a darker color... Are they whole wheat?

While our pastas may look like "whole wheat" pasta you see at the supermarket, the darker color in our pastas come from the lack of bleaches and preservatives in the flour to prevent oxidation. The wheat kernel itself is not stripped of the outside Bran layer before being milled. This leaves more nutrition and flavor in our flours as well as giving them a slightly darker color.

All of our flour is grown by small organic farmers in Vermont and milled fresh for us. They are ground finely to traditional pasta style flour. Our pasta are made in the traditional Italian style which means their texture is light and delicate.

How do I store your pasta?

Our fresh pastas can be kept in the fridge about 2 weeks from purchase (or check the freeze by date on the package). Pasta can be frozen directly in the packaging it comes in.  All frozen pastas should be cooked directly from frozen following suggested cook time.
