Roughly translated to "dirty pasta" don't let the name fool you. This classic pasta shape from Emilia Romagna should really be named grandma's secret weapon. These little square are made from our thin sfoglia dough sandwiched with a thin layer of our cacio e pepe filling. Our cacio e pepe filling is made with organic tellicherry peppercorns and Mt. Mansfeild Creamery's Inpiration cheese. These quarter sized squares are traditionally served in a rich brodo but the possibilities are endless! 

Ingredients: Sfoglia (wheat & spelt flours, eggs), Inspiration Cheese, Farmers Cheese, Black Pepper, Lemon Zest, Salt
