Cavatappi is the Italian word for “corkscrew”. This short tubular corkscrew pasta shape is our take on a maccheroni pasta. Traditionally this dough is traditionally made with hard durum wheat, like semolina.
We make ours with pasture raised eggs and a blend of Vermont grown wheat & spelt as well as Texas grown 00 Flour. The twists and ridges of this pasta idea for creamy rich sauces!
