We are very excited to partner with Vermont Italian Culture Association (VICA) for this special virtual cooking class series! Sunday from 4pm -6pm we will gather together virtually and cook a delicious part of the Italian supper. Part 3 of 4 in these fun cooking class series. February 19: 4pm -6pm
Each week we will be teaching and cooking together a key part to the traditional Italian dinner. Gli Antipasti, I Primi, I Secondi and I Dolce. Join us for 1 or all of these fun cook along classes.
Feb 19 - I Secondi - Arrosto di Maiale con Cipolline in Agrodolce
I Secondi are the main dishes of the typical Italian meal. In Emilia - Romagna in the north of Italy, pork is king. We will make a traditional family recipe for "Arrosto" featuring Perrin Farm's pork* loin rolled with a greens, herbs and spice stuffing, encased in delicious pancetta. Nothing pairs better with roasted meat than Cipoline in Agrodolce. This sweet and sour, onion-balsamic condiment is the typical pairing with a rich herbaceous roast!
*This class can be made with a Pork, Lamb or Beef shoulder or loin weighing about 2 # (will feed about 4-6 ppl) and thinly sliced pancetta or bacon can be used.
This is a super fun, good for all skill levels, no special equipment necessary but kitchen twine is recommended! This class runs about 2 hours via Zoom.
