This fluffy pocket was born in the region of Puglia and is used for a Salento’s famous “anything goes” sandwich which is a sandwich stuffed with whatever you have fresh on hand. This 48 hour fermented dough is made with NEK grains and Barton Spring Mill Durum flour.
