Every town in Italy has their own version of a Tortino. The version made in Emiglia Romagna is very similar to the French style quiches we are so familiar with. Our version of the Tortino features our signature rough puff pastry crust using Vermont wheat, lots of butter and farm grown herbs! This flakey pastry encases a egg custard packed with farm grown leeks and kale. Topped off with a layer of farm grown sunchokes and a brown butter sage sauce! This Italian quiche is the perfect lunch or breakfast and is delicious warm or cold!
