This fun twisty shape is a traditional pasta from Liguria along the coast of Italy. The word derives from the greek word for “nourishment”, this simple dough is all about the flour. Each one is hand twisted using a mix of Vermont spelt grain and heirloom Red Fife 00 flour from Barton Springs Mill. This shape is designed to be coated in sauce. Traditionally this shape is served with basil pesto but the sky's the limit with this fun shape.
