Try our farm grown Cardo Gobbo di Nizza cardoons (the cousin of artichokes) that are confit until tender in organic umbrian olive oil and farm rosemary before being whipped with tend farm grown kale and whipped into local ricotta cheese, mascarpone cheese and parmigiano reggiano. Think "spinach artichoke dip" but in tortelloni form! Stuffed into our delicious Spinach dough. Pair them with a mustard or garlic cream sauce. Or try our farm roots alla vodka sauce!

Tortellini originate from Modena & Bologna regions of Emilia Romagna and these "belly button" filled pastas have a wide variety of traditional fillings. Tortelloni are the largest in the Tortelli family fitting 1 per spoon. Each of our large tortelloni weight ¾ of an ounce. Traditional tortellini are 1/3 of the size of tortelloni, fitting 2-3 per spoonful, and are the medium size pasta in the tortelli family with cappelletti being the smallest which fit about 5 to a spoon.
