The dough is made with flour from Barton Springs Mill 00  blend and NEK grains warthog wheat, and our farm raised fresh eggs. The filling is made with whipped Golfera's Mortadella salami and The Wild Side of Vermont's spicy knot weed honey to make these large tortelloni! Perfect with our alla vodka sauce or a sage butter! Try this taste of Bologna and see the magic that is true Italian mortadella!
Golfera is located in the ancient village of Lavezzola in Italy’s Emilia-Romagna region. Lavezzola has always embodied a long-standing bond between food and landscape and is famous for traditional Italian charcuterie. Golfera maintains complete control over their production chain. This starts with animal welfare, humane feeding and breeding and no antibiotic use after the third month of an animal’s life. Their mortadellas are made with genuine “clean” labels, meaning free of dairy, gluten, monosodium glutamate, nitrates and nitrites. 
Tortellini originate from Modena & Bologna regions of Emilia Romagna and these "belly button" filled pastas have a wide variety of traditional fillings. Tortelloni are the largest in the Tortelli family fitting 1 per spoon. Each of our large tortelloni weight ¾ of an ounce. Traditional tortellini are 1/3 of the size of tortelloni, fitting 2-3 per spoonful, and are the medium size pasta in the tortelli family with cappelletti being the smallest which fit about 5 to a spoon.
