The dough is made with flour from Barton Springs Mill 00 blend and Vermont grown winter wheat, farm grown kale is blended with farm raised fresh eggs to make a green verdi dough.
The farm grown leeks are carmelized and blended with ricotta cheese and farm herbs to make these large tortelloni! Perfect with a rich tomato and garlic sauce or our salsa di noci! These rich tortelloni are perfect for a winter dinner!
Tortellini originate from Modena & Bologna regions of Emilia Romagna and these "belly button" filled pastas have a wide variety of traditional fillings. Tortelloni are the largest in the Tortelli family fitting 1 per spoon. Each of our large tortelloni weight ¾ of an ounce. Traditional tortellini are 1/3 of the size of tortelloni, fitting 2-3 per spoonful, and are the medium size pasta in the tortelli family with cappelletti being the smallest which fit about 5 to a spoon.
