A vermont take on a classic ravioli from the north east of Italy! Trieste is the home to radicchio! This bitter chicory shines when roasted in balsamic vinegar from Giuseppe Guisti. The radicchio is blended with roasted garlic, farm herbs and ricotta cheese. The filling is then tucked into our egg dough made with nutty Vermont grown rye. These ravioli are perfect with a creamy sauce or simply served in a brown butter and sage sauce!
