This is our vegetarian take on this traditional ragu'. Fieldstone Farm grown zucchini and summer squash are caramelized with Pete's Greens onions for 8 hours low and slow. Deglazed in red wine this unctuous sauce is then finished with a touch of cream, farm oregano and basil. Rich, caramelized and ready for your all your ragu needs! Perfect with our malfaldine, linguine or lumache pasta shapes!
Genuine ragù alla bolognese is a slowly cooked meat-based sauce, and its preparation involves several techniques, including sweating, sautéing and braising. Ingredients include a characteristic soffritto of onion, celery and carrot, different types of minced or finely chopped beef, often alongside small amounts of fatty pork. Red wine and milk are added to the dish is then gently simmered at length to produce a thick sauce.
