Coming from the coastal towns of Sardinia, these little ridged shells are traditionally made with hard durum wheat, like semolina and served with fresh caught seafood. We make ours with the ancient form of durum wheat, Emmer wheat blended with Vermont grown spelt and wheat.
This versatile little shape is great in minestrone soups, mac & cheese, or served in a saffron rich seafood dish.
