Fluffy layers of hand rolled lasagna sheets are made from our signature blend of local and 00 flours and our rich farm eggs. These sheets are layered with a rich Hen of the Woods mushroom ragu. Our ragu is made by caramelizing Hen of the Woods mushrooms low and slow with our farm grown tomatoes, onions, garlic and herbs. A thick layer of our brown butter and Parmigiano Reggiano 24 month from Modenese Bianca bechamel is topped with more Parmigiano Reggiano.
This lasagna is ready to pop in your oven and take a trip to the mushroom packed hills of northern Italy. This show stopping lasagna is rich, delicate and crushable. With a soft delicate center and crispy edges.
Bake at 375* with foil on for 35-40 minutes, remove foil and bake at 425* for 30-40 minutes until golden brown.
